Removing this style back for reupholstery?

Hi All!

I'm looking at reupholstering these chairs (they come with a dining table I'm looking at buying), but I'm not sure how one would go about removing this type of back to reupholster it. It looks like they are attached via wood dowel, sanded and sealed, which looks tricky to remove.
Has anyone worked with something like this that could advise?

On the first picture (the backrest) you notice two darker circles on the side, those are plugs to cover the screws, you need to drill them and pick them out to access the screws, y ou will need new plugs after, you glue them in place, cut them flush, sand and varnish
