I've seen just about everything put down as a floor in a rig, right up to show trucks having completely custom painted aluminum panels that only sock feet are allowed to touch. I've got hard wood in my 359. I've seen guys use laminate too. I wouldn't be scared to put either in a truck as long as the subfloor is good and straight. Main thing is being able to take it back out if a guy ever has to do a clutch job or some brake valve job on newer trucks.

If you do decide to go hardwood make sure its tongue and groove cut so it locks together and put a good poly sealer or acrylic sealer on it to combat moisture.

I used a old chevy bed trim kit from LMC truck to secure mine together. Put screws through the tongue and groove and covered them with chrome caps.
