Hi John...in your experience, what stitch length do you feel is most attractive in diamond inserts? With the stitch being a large part of the look and over all appearance I was wondering for both single stitch and double stitch diamonds?

It really just depends on the look you going for and the thread size you are using.
For example if Im using 92 thread I typically have the stitch length set to around 1/8"
With thicker thread it looks better if with longer stitches.
I suggest doing a few test pieces on some scrap to see how you like it and pick what looks best for your project.
