I've been slowly working my way through redoing the interior of my 1967 VW Beetle. I had put in a stock carpet kit two years ago, which I (stupidly) thought I was going to put back into the car, but after doing a full custom headliner, diamond stitched door panels and seats, and an embroidered backseat delete, the carpet looks very 'meh'. So I've decided to go with German Square Weave, because I think I just like scaring myself now. I'm just curious, however, I want a fabric binding, as opposed to a leather/vinyl look and I'm wondering what this actually is? Would this just be the canvas binding that Albright's have?

Also, advice on the correct size needle/thread for stitching this?

Yes that looks like a canvas binding however I have never seen it for sale quite like whats in your picture. The canvas binding most suppliers in the states sell is typically made out of Sunbrella and has a finer weave. The one in your picture is more course. I dont know if that matters to you.

Worst case if you cant find it you can always make it your self. Its tedious but is possible.

Youll be fine using a size 18 or 20 needle size 92 thread.

That's even better! I love seeing the progress beginners have made with the help from the members here. No reason to be intimidated. We are all here to help each other. I started this forum as a way to begin documenting upholstery knowledge so that the trade wouldn't continue to disappear. Asking beginner questions is important because it helps so many other people with the same question.
