I'm working on binding some carpet floor mats. I'm struggling with the curve and getting the mat to lay flat when it's complete (the vinyl looks great around the curve but the curved section as an upward bend). I'm using vinyl to create the binding and using the hidden stitch method that John outlined in the carpet binding videos. I cut relief cuts as I went but that doesn't seem to make a difference -- the final product still has a curve to it.

Suggestions?

You might try to pull the vinyl a little tighter around to the back side of the carpet as you sew it. You could also try doing your initial stitch to hold the binding to the carpet and then glue the back side of the vinyl binding and the perimeter of the back side of the carpet and then stick it down so you don't have to try to hold it as you sew it. And this way you will be able to see what it looks like before you sew it up and make sure you like the look of your corners. It defiantly takes a little practice to get them looking good but the results are worth it. I have also had good luck getting them to lay flat by doing a top stitch on the binding instead of trying to hide the stitch between the carpet and binding.

I do a ton of binding over some complex perimeters and have found the Sailrite binding attachment to be indispensable, which may not work out for you.

Another thing I notice is your stitches are shorter than I would choose, I’m always at full stitch length while binding.
